I am SO excited to offer my first giveaway to my fabulous readers! This is one of the best parts of blogging, in my humble opinion. When great companies reach out to us bloggers and offer free products for our readers, everyone wins.

Onto the goodies!

I have ten, count 'em, TEN, sets of {7} coupons for (1) FREE can of Swanson Premium Chunk Chicken, with maximum value of $3.99.

That means that TEN of my fabulous readers will win (1) set of (7) coupons for FREE Swanson Premium Chunk Chicken - a value of up to $27.93! WOOT!

If you also read my friend Andrea at Mommy Snacks or my friend Erin at $5 Dollar Dinners, they both just ended their Swanson Chicken giveaways. I'm happy to give you another chance to win!

And I also want to add how grateful I am to have a good friend like Andrea who never hesitates to share her bloggy good fortune with others. Thanks for suggesting my blog to Swanson, Andrea!

There's plenty of yummilicious recipes for these handy cans of Swanson Premium Chicken; if you were hanging out at a Super Bowl party yesterday, you may have been lucky enough to be munching on some of this:

The TEN winners of this giveaway will also receive a recipe card for Frank's RedHot Buffalo Chicken Dip made with Swanson chicken; to view the recipe right now, go visit Entertaining Escapades.

Some other great recipe ideas for Swanson Premium Chunk Chicken include Chicken Quesadillas and Cheesy Chicken Chowder. See even more recipes at Cooking with Swanson Chicken. All of the recipes are quick to prepare, perfect for making dinner on busy nights.

I know you're itching to enter this giveaway already so here's how you can win!

* Leave (1) comment EACH day through this Thursday (2/5/09) and tell me what your favorite easy chicken dinner recipe is; you can leave a link in your comment to the recipe online, too. That's a total of (4) comments/entries.

*Subscribe to my RSS feed here for your reader or subscribe to receive updates by email here. If you do subscribe, please come back to this giveaway post and leave a comment letting me know you've subscribed; if you're already in the cool kids club and are a current subscriber, leave me a separate comment telling me that, too. That's (1) more comment/entry.

*Tweet about this giveaway with a link back to this giveaway post (you can use Tiny to shorten this post's URL for your Tweet). Come back and leave a separate comment letting me know you tweeted about this giveaway. That's (1) more comment/entry.

If you do ALL of these, you'll have SIX entries total for this giveaway. Only (1) entry per person will win (meaning you can't win twice).

If you don't have a blog, be sure to leave me your email address so that I can find you if you're a winner. This giveaway will close on Friday, 02/06/09, at 3:00 pm EST and I will announce the winners (chosen by Random.org) later that evening.

My favorite easy chicken recipe is to take a couple of cans of chicken, drain it, and mix it up with a block of cream cheese, finely chopped onions & garlic, and some salt and pepper. Then wrap it all up in crescent rolls. Bake and enjoy. Oh and then go run about 12 kajillion miles to burn the cals!

Just twittered this to all my 140 something followers! most of them are moms like us. Love to use swanson chicken to make easy chicken and dumplins,
    1 can Kroger biscuit dough
    1 can swanson chicken
1 bag "seasoning blend' frozen kroger veggies.
    2 pats of butter
    1 quart, swanson chicken stock
put butter and veggies in a pan. cook on medium low until celery and onion wilt and carrots soften slightly this will take about a minute and a half. Now add chicken and cook for a second and then dump the stock in the pot and bring to a boil. Once at a low boil rip or cut up the biscuit dough and cook for twenty minutes. done!

My favorite chicken recipe with canned chicken has to be chicken nachos! I spread out a layer of tortilla chips on a pizza pan, and then top with canned refried beans, cheese, sliced jalapeno peppers, and a Rotel/canned chicken mix. Bake until everything is hot...about 20 minutes. Yum yummy! I usually add chopped tomatoes and lettuce afterwards, and serve with guac and sour cream. Mmm...maybe I'll make this tonight ;)

Is it bad if my easy canned chicken dinner is chicken salad with crackers? Actually I like to take canned chicken mix it with frozen veggies and then hold the whole mixture together with pancake batter. Throw in the griddle and I have instant all in one dinner that my carb loving toddler will eat. Add some ketchup or bbq sauce and he is in heaven.

A little goes a long way!) and whatever vegetables you want. Let it cook down to thicken, you can add a little cornstarch and water if you need to.

It's super easy - mix Swanson chicken, cream of chicken soup, Minute Rice (several cups - I don't measure, I just go by sight), milk (to desired consistency, it will dry out as you bake it). I also throw in some onion & pepper to taste. Bake at 350 for an hour.

Our favorite receipe to use canned chicken in is Chicken Pasta. Just boil/cook a box of bow tie pasta according to the directions on the box. Mix the pasta with two jars of Ragu Alfredo Sauce and one of the bigger cans of chicken. And just like that you're done. My family LOVES it and we have it about once a week so I could REALLY use the coupons!

    Ingredients
    2 tablespoons olive oil
2 tablespoons chopped fresh cilantro leaves, plus a few whole leaves for garnish
    1 tablespoon chili powder
    1 tablespoon ground cumin
    2 teaspoons kosher salt
    1 clove garlic, chopped
1/2 teaspoon freshly ground black pepper
    1/8 teaspoon cayenne
4 boneless, skinless chicken breast halves (about 2 pounds)
1/4 cup julienned green bell pepper
    2 tablespoons diced red onion
1 medium plum tomato, cored and diced (about 1/4 cup)
    4 ounces shredded Colby-Jack cheese
    Directions
Preheat oven to 400 degrees F.

Whisk together the oil, chopped cilantro, chili powder, cumin, salt, garlic, pepper, and cayenne in a bowl; add the chicken and toss to coat.

Transfer chicken to a foil-lined baking sheet and arrange the green pepper, onion, and tomato over each. Roast until the largest piece is just cooked through, and an instant-read thermometer inserted in the thickest part reads 165 degrees F, about 20 minutes.

Remove the chicken from oven and immediately top with the cheese and serve as the cheese melts. Transfer the chicken to a platter or among plates and garnish with fresh cilantro leaves.

    One more chicken dish...

Mixed drained canned chicken with some sauteed leaks, mozzarella cheese and the spices of your choice. Put a spoonful inside crescent or dinner roll dough, close the dough around the filling and bake according to package directions.

Oh, do I need to have a new idea each time? Well, I love to make chicken salad with canned chicken, but sometimes I add mandarin oranges and some curry powder, and maybe some slivered almonds. Makes a fun change from the grape one!

I also use canned chicken in my chicken taco pie, which is kind of a cross between enchiladas and lasagna, but with cream of chicken soup and sour cream as the sauce, and with flour tortillas. It's my husband's favorite meal.
