Menu Plan Monday: Week of February 2

I stocked up on the last day of the Kroger Mega Savings Event (yesterday 2/1) and I'm psyched for the Daytona 500 sale promotion at Kroger this week. My pantry is *happy*.

I haven't cooked the soup from last week so I'm moving that over to this week. It looks to be a terribly busy week for me so I'm planning easy meals that can cook in the crockpot.

Here's what I've got:


Cincinnati Chili {made with Gold Star spice packet} + salad


O'Charley's {copycat} Potato Soup + rolls
{FYI: I'll use real cheese in this, not Velveeta!}


Slow Cooker Chicken Enchilada Casserole + Pinto Beans and Tortillas (with some lettuce, tomato, etc)


Honey Baked Chicken + Rice + Veggies


Armour Italian Meatballs and Peppers Penne + salad


Slow Cooker Sausage with Mixed Barbecue Beans + rice

    I definitely "borrowed" some of your recipes. I have just recently started menu planning and find it challenging sometimes. It helps so much to have blogs like yours to support my efforts! Glad I found you!

    Tracy: LOL! They're definitely not my recipes! I just search for ones I know my family would like and for ingredients I have on hand or will get on sale each week.
