I'm hosting Easter dinner this Sunday so I'm keeping my workload in the kitchen as light as I can this week.

Monday

Pigs in Blankets (hot dogs & brats), fresh fruit salad, carrot and veggie sticks

Tuesday

Kielbasa and Cabbage

Wednesday


Mexican Lasagna
(I made this as one of my Double Duty Dinners last week and froze it; I'm serving it with shredded lettuce, diced tomatoes, sour cream, and guacamole.)

Thursday

Homemade Meatball Pizza with Bread Machine Copycat Pizza Hut Pizza Dough

Good Friday

Grilled Cheese Sandwiches + Mac-n-Cheese

Saturday

Free night

Sunday

Easter Dinner
Honey Glazed Ham + lots and lots of snacks, sides and desserts!! (Thanks to all my family who are helping to lessen my workload by bringing goodies!)

    The mexican lasagne sounds great - I am going to make it instead of enchiladas this week!

    How are the tortillas after you freeze them? I would never think of freezing it.

    Jennifer: I actually thawed this and we had it last night (I had baked it then froze it).

    It was really good! The whole thing thawed well and I nuked it for about 6-8 minutes to get it bubbling again. Everyone ate it, including my daughter's friend who was over for dinner.
