Are you looking for ideas on what to plan for your family dinners this week? Go visit the links (there are TONS!) of other blogger's meal plans over at Menu Plan Monday at OrgJunkie.com; while you're there, check out her monthly challenge -- spring is a great time to clean out one of those pesky closets or cabinets that overloaded with stuff you don't use anymore.

I'm hosting Easter dinner this Sunday so I'm keeping my workload in the kitchen as light as I can this week.

Pigs in Blankets (hot dogs & brats), fresh fruit salad, carrot and veggie sticks

Mexican Lasagna
(I made this as one of my Double Duty Dinners last week and froze it; I'm serving it with shredded lettuce, diced tomatoes, sour cream, and guacamole.)

Homemade Meatball Pizza with Bread Machine Copycat Pizza Hut Pizza Dough

Good Friday

Grilled Cheese Sandwiches + Mac-n-Cheese

Free night

Easter Dinner
Honey Glazed Ham + lots and lots of snacks, sides and desserts!! (Thanks to all my family who are helping to lessen my workload by bringing goodies!)

Courtney: Thanks!! I'm sure I will enjoy it...once it's all done and on the table!

The mexican lasagne sounds great - I am going to make it instead of enchiladas this week!

How are the tortillas after you freeze them? I would never think of freezing it.

Jennifer: I actually thawed this and we had it last night (I had baked it then froze it).

It was really good! The whole thing thawed well and I nuked it for about 6-8 minutes to get it bubbling again. Everyone ate it, including my daughter's friend who was over for dinner.
