Menu Plan Monday: Week of May 25

It's Memorial Day today and I want to take a moment to thank all those who have served our nation in the Armed Forces and to thank all of the families who are left behind while their loved one is defending our freedoms. You are all heroes.

For most of May, I've cooked doubled meal plans every other week, freezing the doubled main dish and serving it up again the following week. It's been very successful for me and I'm sure I'll use this meal planning strategy again. This week, however, given the holiday as well as several events on the calendar, I'm cooking a simple mean plan that I *won't* be doubling.


Grillin' Out! We're trying Yummy Honey Chicken Kabobs and I'll throw some extra chicken on the grill that I can freeze for later in the week.


Copycat LaRosa's Pizza and salad...and birthday cake for my oldest son!


Butter Beef over egg noodles + steamed veggies


Bacon Wrapped Mexican Hot Dogs {we've developed a serious craving for this recipe} with salad and veggie sticks


Restaurant Style Chicken Nachos {I'll use some of the extra grilled chicken from Monday for this recipe} with fresh fruit
