Menu Plan Monday: Week of May 4

Well, my plan last week of cooking doubled dinners for my meals....WORKED!

Here's the link to last week's doubled menu plan.

I have (4) main dishes in my extra freezer; the grilled chicken we cooked on Saturday was SOOO good that there was just a little bit left (we also had my awesome bro-in-law and super mom-in-law here for dinner that night).

Here's what we'll be having this week; items that were doubled and frozen from last week's meal plan are bolded:

Hamburgers and hotdogs, Grinny Beans (this is a family recipe, sort of a spaghetti, tomato, and bean casserole - yum!), and salad

Happy Cinco de Mayo!!

Tacos + all the yummy fixings

Meatball Subs, French Fries (frozen), and tossed salad

Oven Fried Chicken and Slow Cooker Macaroni and Cheese, carrot and celery sticks

Apple Porkchops shredded and used to make Pulled Pork Sandwiches with chips, fruit, and celery & carrot sticks

Off to my awesome sis-in-law's for dinner to celebrate my nephew's First Communion!

Happy Mother's Day!!

{Free Night! This mama is NOT cooking a THING!!}

Need menu ideas? Remember to check out the mega links at Orgjunkie's weekly menu-fest, Meal Plan Monday. Planning a menu each week takes a few minutes, but it saves so much time and stress every night - totally worth the effort.

    Your Frugal Friend, Niki: Thanks!

    The best part is that most of it is already cooked! I need all the bits of time I can find in May.

    And I looove pulled pork...yum!
